Strawberry Cheese Cake in Ramekin and Jar
It is hot Saturday, that does not mean I want to stop cooking or baking. Perhaps I may try out something no bake recipes. I always wanted to try out Strawberry Cheese Cake in small portion - ramekin type. Well at least I will not feel guilt and bad eating when enjoy it. ;p It is also happy time to Olivia as I will ask be my assistant. Well, in actual I am the assistant as at when help, monitor and take over if she feel difficulties or tired. :)
It is pretty simple and I am sure you will like enjoy. I am ready to share out my recipe, do hope you like it. :)
Strawberry Cheese Cake in ramekin and Jar
Ingredients:-
For biscuit base
- Unsalted Butter 2 table spoon
- McVitive's The Original Digestive biscuit 4 to 6 pieces
For filling
- Cream cheese 120 gram
- Whipping Cream 1/4 Cup
- Icing sugar 3 table spoon
- Lemon juice 1 table spoon
For topping
- Frozen strawberry 250ml (cube) or blueberries
- Icing sugar 2 table spoon
- Lemon juice 1 table spoon
Methods:
1. Cut strawberry into cube.
* You may also try out blueberries or whichever is sour.
2. Bring strawberry, icing sugar and lemon juice into small heat until left few lumps, leave cool.
* Do not add water when you boil it.
3. Mix all cream cheese, whipping cream and lemon juice evenly. Add on icing sugar.
4. Crushed the biscuit in a bowl with rolling pin and blend it until get crumbs. Mix together melted butter and biscuit crumbs until wet.
5. Pour the biscuit into ramekin and jars. Slight press down to have solid base. Then pour over the filling into second level and final topping is strawberry.

Tagliatelle with Squid and Chicken
Yay! It was lovely off Friday, a public holiday which is my rest day from work. :) but, it will be my work day in kitchen. :p Mother in law will presume when is public holiday, cooking for the day will be fully in-charged by me.
I normally will cook something different either mother in law seldom cook or never cook dish. Hehe any new recipe will try out by my family members. I had tried before Tagliatelle Verde with Lemon Pepper Salmon and today I would like to try out another type of cooking Tagliatelle Verde with Squid and Chicken.
Tagliatelle Verde with Squid and Chicken
Serving: 5-6 paxs
Ingredients:-
- 400gram chicken breast, grilled it
- 4 Sausages
- 2 tablespoons extra-virgin olive oil
- Salt and freshly milled black pepper
- 1/3 cup sultanas, soaked in warm water for 30 minutes
- 500gram tagliatelle verde
- Squids
- 2 to 3 tablespoons chopped parsley leaves
- Rosemary and Oregano (your preference, I love these 2 spices) :)
- 1 Onions
- White Buttons Mushrooms, sliced it
- Cashew Nut or pine nut or chestnut, cut into small cube
Methods:-
I do not have oven, thus I may go for grilled the chicken.
1. Rub the chicken with the oil and sprinkle with the salt and pepper, then place it breast down in a grilled it. Grilled it till well done.

2. Keep those juices run out from chicken. Cut
into stick or cubes as your preference. Keep aside.
3. Bring a large pan of salted water to the boil and cook Tagliatelle Verde until al dente as directed (tender but firm to bite) Drain well.
4. Add olive oil to cook the squids and use back the juice (chicken) as part of your sauce, add onions, mushrooms in the pan.Add the rosemary, the drained sultanas and the cashew nuts.
5. Cook and drain the pasta, and toss it with the sauce, chicken pieces, and parsley in a large warmed bowl.
Remarks: You may put some lemon juice on it to increase appetite.
You may reduce the noddle portion if you are not big eater. William and mother in law are traditional people. They may not really enjoy or love the spice taste.

Rectangular Ultraman Bento
I had been missing bento for days as my girl told me she wish to have her meal with her buddies. :s Yesterday had short conversation with her that her school friend name Ryan always tell her how ultraman beat those monsters. lol
I gave her little surprise that made the rectangular ultraman. The bread is filled with nutella and details are made from cheese and nori. I also pack it with fresh sweet pears and Hersheys peanut chocolate.
After reviewed, she claim I cheat as ultraman head suppose to be round oval not rectangular! She is gonna bring it to show her friend - Ryan which part was not correct. :s

Sesame King Oyster Mushrooms
Sesame King Oyster Mushrooms
Ingredients:
- 1 pack King Oyster Mushrooms
- 1 tablespoon Olive oil
- 1 tablespoons sliced green onions (for topping)
- Toasted Sesame Seed (for topping)
Methods:
- Cut off the ends of mushroom, then wash them.
- Make the seasoning sauce by mixing the ingredients.
- Slice the mushrooms into 0.5cm thickness and mix with sauce about 15 minutes.
- Add olive oil on heated pan, then bake the seasoning mushrooms on each side about 3 minutes until brown.
- Garnish with sliced green onions and sesame seed.

Cinderella Bento
Olivia on and off will hint me that she love the story of Cinderella. It is really challenging for me as it really require a lot of patient to work on it. I Google online to see which version Cinderella look great and easy....conclusion....it is still tough work. ^-^'
I used cheese as base of the skin colour. I sketch her outline from cheese and everthing must done in fast manner to avoid the cheese melt and soft. Work has to be stop and fridge when you feel the cheese is soft.
I used tweezers to pick hundreds and thousands to colour Cinderella dress, hair and her gloves. Argghh...every hundreds and thousands is hard sweat work. I keep mumbling and tell myself...Sannee! Sannee! You are really out from your mind! Those hundreds and thousands are so tiny like beads. I took about 3-4 hours to fill up all.
I was actually struggling in eyes part as I feel close look Cinderella do not have sparkling eyes but alien eyes. :s
I pack it with peanut bread and red grapes.

Minion Nutella Bread Bento
I admire Bento Monsters creativity work especially the bread minion and give myself a try. ;p It seems not really turn out good as my nutella getting dried out. Arghh... Thank god Olivia still can recognize out who is the character. Phew......I wonder how bento mummies keep the nutella jam? I always dare not buy the largest can one though the saving is bigger than the medium can.
I pack it with nutella bread and Moo Moo Free Chocolate as I am running out of fruits from fridge. lol She will have her Dessert with fruits Burberry flavour after she back from school. My girl and I kind of in love with this. yummy!

Despicable Me Minion Bento
I had been lazy for past week and the little one wish to had her meals with her buddies. Gotta to respect her decision. :)
I was inspired by Bento Monsters that she shed me the light of idea to made my minion in bread and cheese form. ;p
Minion is made from bread and cheese and details add with nori. I also pack it with red grapes. She will her snack pack fat free while she back from school.
I must hold my legs not to go any nearby McDonalds as there are bringing these cute little minions toy and collectibles. I have bad habits once I have anyone of it, I will try to collect others too.
